Warm Chicken with Pasta and Vegetables

Just thinking about this recipe has us drooling! The chicken and vegetables create a delicious sauce that coats the noodles. It is a protein, veggie, and fiber-rich meal that will keep you satisfied and warm! 

Ingredients: 

Serves 6 

  • 1 ½ pounds chicken thighs (boneless, skin removedcut in 2-inch cube size pieces) 
  • 2 teaspoons onion powder (divided)  
  • 2 teaspoons garlic powder (divided) 
  • 2 teaspoons Italian seasoning (divided)  
  • 1 tablespoon olive oil 
  • 4 quarts water 
  • 12 ounces (about ¾ of a 1lb box) whole grain spaghetti noodles  
  • medium tomatoes, diced 
  • 1 bunch scallions, chopped (approximately 1 cup) 
  • bell peppers (combination of green, yellow, orange, or red), diced into 2-inch pieces 
  • ½ teaspoon black pepper  
  • 1 teaspoon salt  

Instructions: 

  1. Wash hands thoroughly with soap and water.
  2. Do not rinse raw poultryAdd chicken pieces to a mixing bowl, season with 1 teaspoon each of onion powder, garlic powder, Italian seasoning. Mix well.  
  3. Cover and set in fridge for 20 minutes or overnight. 
  4. Wash hands with soap and water. Thoroughly clean area where raw chicken was prepped with a hot, soapy rag. 
  5. When ready to cook, heat a large skillet on medium heat. Add olive oil and seasoned chicken. Sauté, stirring occasionally. Cook until internal temperature of chicken is at least 165 degrees, about 10 minutes. 
  6. While chicken is cooking, bring 4 quarts (1 gallon) of water to a boil in a separate pot. Add whole grain pasta noodles to boiling water and cook according to boxed instructions, until pasta is tender. 
  7. Add tomatoes, scallions, sweet peppers, and 1 teaspoon each of onion powder, garlic powder, Italian seasoning, ½ teaspoon black pepper, and 1 teaspoon salt to the chicken. Sauté chicken and vegetable mix until vegetables are warmed through and slightly softened, about 3 minutes. 
  8. Drain pasta and add to the chicken and vegetables. Mix well to combine. Let simmer, mixing occasionally, until liquid thickens and coats noodles. Serve warm. 

Notes: 

  • Add a dash of cayenne powder, chili powder, or crushed red pepper flakes for some heat! 
  • Use your family’s favorite vegetables to make it a custom meal! 
  • Raw chicken and other meats are a source of dangerous bacteria (1). When handling raw meat, be sure not to touch spice containers, handles, or other unnecessary surfaces to keep your family safe. Always wash utensils, bowls, and surfaces with hot, soapy water after coming in contact with raw meat!
