If you are looking for some healthy, tasty treats for your Halloween get-togethers or an in-between snack to make with kids, try these easy and tasty snacks that can be enjoyed instantly  – while you are on the go.

Spider Deviled Eggs

These simple, delicious Deviled Eggs [1] are a fun way to include a good source of protein and satisfy your hunger cravings.

Serves 4

Ingredients:

  • 6 eggs (in the shell)
  • 2 tablespoons light mayonnaise
  • 1 teaspoon mustard
  • 15 black olives

Instructions:

  1. Put eggs into a saucepan. Cover with cold water.
  2. Bring eggs to a simmer (small bubbles) and cook for 12 minutes.
  3. Remove from the heat and drain.
  4. Crack eggs under cold water and allow to cool. Remove shells.
  5. Split eggs in half, lengthwise, and remove yolks.
  6. Put yolks, dressing, and mustard into a small zipper-lock plastic bag to mix.
  7. Cut a small hole in the lower corner of the bag. Squeeze mixture into egg white halves. Garnish as desired.

Notes:

Have fun with the following garnishes.

  • paprika
  • cayenne pepper (if you like it hot)
  • pickle relish
  • sliced scallions
  • sliced green or black olives
  • 1/8 tsp each of salt and pepper may be substituted for 1 tsp mustard.

 

English Muffin Veggie Pizza

Kids will love to help make these Veggie Pizzas [2] and it is a great way to get them to eat healthy vegetables like broccoli, peppers, carrots, or any other bright colored vegetable. You can even have your children use the vegetables to make faces on the pizza for more Halloween fun! For an even healthier version, try making these pizzas with whole wheat English muffins.

Serves 4

Ingredients:

  • 1 cup broccoli (cooked chopped)
  • 4 English muffins
  • 1 cup pizza sauce (or spaghetti sauce)
  • 1/2 cup mozzarella cheese, shredded, part-skim
  • 1/4 cup carrot (4 Tablespoons, shredded)
  • 1/3 tablespoon Parmesan cheese (1 teaspoon, grated)

Directions:

  1. Cut the broccoli to make 1 cup of chopped broccoli.
  2. Put the broccoli in a saucepan with water. Cook on medium until tender.
  3. Drain the water from the saucepan. Let the broccoli cool.
  4. Cut 4 English muffins in half. Toast the 8 muffin halves.
  5. Shred the mozzarella cheese to make ½ cup of shredded cheese.
  6. Peel and shred the carrots to make 3 tablespoons shredded carrots.
  7. Spoon 2 tablespoons pizza sauce over each English muffin half.
  8. Sprinkle 1 tablespoon shredded mozzarella cheese on top of each half.
  9. Put 2 tablespoons broccoli and 1 teaspoon shredded carrots on top of each half.
  10. Sprinkle each half with 1 teaspoon grated parmesan cheese.
  11. Toast in the toaster oven for 2 minutes, until the cheese melts.

Apple Wedges with Pumpkin Almond Butter Dip [3]

Apples are high in antioxidants which may help prevent diseases such as heart disease, cancer, and asthma, as well as help you maintain a healthy lifestyle. [4]

Dip Ingredients:

  • 1/2 cup pumpkin puree (canned or from scratch)
  • 1/3 cup almond butter (or crunchy peanut butter)
  • 2 tablespoons maple syrup
  • 1/8 teaspoon cinnamon

Directions:

  1. Mix together dip ingredients.
  2. Serve with apple slices.

 

Roasted Pumpkin Seed Snack Mix [5]

Pumpkin seeds can be eaten alone or added to dishes for extra taste and a crunchy texture. Pumpkin seeds, also called pepitas, are packed with healthy nutrients – which may aid in preventing diseases like Type 2 Diabetes and Heart Disease.  These seeds can strengthen your immune system and aid in getting a good night’s sleep. Serves 8

Ingredients:

  • 2 cups crispy rice or wheat cereal squares
  • 1/2 cup roasted whole pumpkin seeds
  • 1/3 cup slivered almonds
  • 1/2 cup dried cranberries
  • 1/2 cup raisins
