This Valentine’s Day, show your love by preparing a recipe that captures the essence of your affection: Crispy Tortilla Pizza. Nothing says “I love you” more than a pizza. Don’t forget to throw your heart into it!
Ingredients:
Serves 4
- 4 (6-inch) flour tortillas
- 1/2 teaspoon olive oil
- 2 cups mushrooms
- 1 green bell pepper
- 1 red onion
- ¼ teaspoon black pepper
- 1 teaspoon Italian seasoning (or Oregano)
- 2 teaspoons minced garlic
- 1/2 cup tomato sauce (no salt added)
- 1/2 cup mozzarella cheese (shredded)
- 2 teaspoons Parmesan cheese (grated)
Instructions:
- Wash hands with soap and warm water.
- Heat oven to 400 degrees Fahrenheit.
- Place tortillas on 2 large baking sheets.
- Bake, flipping once, until crisp and lightly browned, about 6-8 minutes. Set aside.
- While the tortillas are in the oven, wash bell pepper and red onion under running water. Wipe down mushrooms with a damp towel.

- Heat oil in a large skillet over medium heat. Add mushrooms, peppers, red onions, garlic, black pepper Italian seasoning.
- Cook until all vegetables are soft and tender, about 10 minutes. Set aside.
- Spread 2 tablespoons of tomato sauce on each tortilla crust. Then, add 1/4 cup of the vegetable mixture, 2 tablespoons of mozzarella cheese, and 1/2 teaspoon of Parmesan cheese to each tortilla crust to create four personal pizzas.
- Move pizzas to baking sheets and cook until cheese is melted, and the edges of the tortillas are golden brown (about 6-8 minutes). Let the pizza cool for a few minutes before serving. Garnish with dried or fresh basil and red pepper flakes then enjoy!
